Christmas Truffles

Truffles are easy to make and these champagne truffles are easy to eat, as well. You can coat them in traditional melted chocolate and powdered cocoa or you can coat them with sanding sugar for a sparkling effect.
Sanding sugar is a type of sugar that looks like clear crystals. It is used for decorating cookies, cakes, and anything else that needs a touch of sparkle. I like to use them on champagne truffles because they imply the bubbles that make champagne so delightful.
Sanding sugar is available in various colors and you might want to get several different colors. Red and green are seasonal and festive colors that will make your champagne truffles look like Christmas tree decorations.
For fans of the aria "Pink Champagne" from Die Fledermaus, pink sanding sugar with pink champagne in the truffles can make your New Year's celebration all the more spectacular.

Ingredients

· 8 ounces of bittersweet chocolate, chopped
·  4 ounces of heavy cream
· 1 ounce of butter
·  1/4 cup of champagne
· 1 tablespoon of cognac
·   ½ cup of clear sanding sugar

Instructions

1.Place the chopped chocolate in a heatproof bowl.
2. In a saucepan, bring the butter and cream just to scalding. This is when the cream just starts to simmer.
3. Pour the heated cream over the chocolate and stir until the chocolate has melted and is smooth.
4. Add the champagne and cognac.
5.  Stir until well combined.
6. Let rest in your refrigerator for at least one hour.
7. Once the chocolate is firm enough to ball, form into 1-inch balls.
8. Roll each truffle in the sanding sugar.
9. Place the chocolate balls on a cookie sheet that has been lined with parchment or wax paper.
10. Place the cookie sheet with the truffles in your refrigerator.
11. Let rest for one hour.
12. For a fun alternative, you can use sanding sugar of different colors.
