Steak Rub Recipe


A good steak rub recipe and a hot grill are all you need to take your summer party from good to fabulous.

What's At Steak

Recipes for steak rubs are many, varied, and usually good for use on lamb and pork as well as beef. A steak rub recipe is similar to a marinade in that it adds flavor to your food but, unlike a marinade, it creates an enticing crust on the food when the heat hits the it.
Steak rub recipes are useful whether you are grilling your food or smoking it. If you are not using a smoker, and I usually don't in party situations, I have found that the best results are from searing the steak over a very high heat and then moving it just off the heat to finish cooking.
The best way to do this is to light half of your grill and let it heat up while the cover is closed. If you are using a charcoal grill rather than a gas grill, start your coals as usual and, before you start cooking, use a set of tongs to move all the coals to one side of the grill. After you have done this, close the lid for a few minutes and let the inside of the grill get good and hot.
The next step is to rub the grill down with some oil. Vegetable oil works best. This is just to keep the steak from sticking to the grill. Then place the steak down onto the grill and close the top. Let the steak cook for about a minute or two and then turn it about a half a turn. This will give your steak the diamond shaped grill marks you are looking for.
Let the steak cook for another two minutes and then turn it over. Repeat this process for the second side of the steak. After this, move it just off the heat and close the top of the grill. You want to cook your steak to 145 degrees for medium rare or 160 for medium. Be sure to let your steak rest for five to ten minutes before carving. This gives the juices time to redistribute inside the meat so the juice is in the meat and not on your plate.

Steak Rub Recipe

Ingredients

  • 2 tablespoon paprika
  • 2 tablespoons chili powder
  • 2 tablespoons cayenne
  • 2 tablespoon garlic powder
  • 2 tablespoon packed dark brown sugar
  • 1 tablespoon cumin
  • 1 tablespoon dry mustard
  • 1 teaspoon ground sage
  • 2 tablespoon salt
  • 1 tablespoon ground pepper

Instructions

  1. Wash and pat dry your steak.
  2. Rub all sides of the steak with your steak rub.
  3. Let the steak rest in your refrigerator for at least an hour, overnight is best.
  4. Grill your steak.

Once the Steak is Done

A good dose of barbeque sauce will bring your steak to perfection.
