Turkey Leftover Recipes


Leftover turkey is so useful that it might actually be a good thing to make more turkey than you need so you can explore your turkey leftover recipes.

Let's Talk Turkey

Once Thanksgiving is over, the fun begins. If you have planned correctly you will have plenty of leftover turkey to play with. Turkey leftover recipes come in many variations from the quick and easy turkey salad to the more exotic turkey soufflé. There seems to be no end to the delicious dishes that can be whipped up with leftover turkey.

Turkey Soufflé

A turkey soufflé is an elegant leftover turkey recipe. Serve this soufflé as soon as it comes out of the oven so it is tall and hot when you present it to your guests.

Ingredients

  • 2 cups diced leftover turkey
  • 1 cup cooked rice
  • 1 cup soft bread crumbs
  • 1 cup turkey stock or gravy
  • 1 teaspoon salt
  • 1 pinch of fresh ground pepper
  • 2 teaspoons stuffing
  • 1/4 teaspoon coriander
  • 1/4 teaspoon onion salt
  • 4 eggs separated

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit
  2. Wrap a 1 1/2 quart soufflé dish with a 3 1/2 inch piece of white paper so that the paper is well above the edge of the dish.
  3. Tape or tie the paper in place.
  4. Mix the turkey, rice, crumbs, and the stock or gravy in a bowl until well combined.
  5. Season with salt, pepper, onion salt, and coriander.
  6. Beat the egg yolks until lemon colored and smooth.
  7. Mix into turkey mixture.
  8. Beat the egg whites until stiff.
  9. Fold gently into the turkey mixture.
  10. Immediately pour the mixture into the soufflé dish.
  11. Place the dish into a shallow pan of hot water.
  12. Bake for one hour and 15 minutes or until well risen and firm on top.
  13. Remove paper and serve immediately.

Oyster and Turkey Pie

This fun variation on the turkey meat pie has a rich taste that comes from the truffles. If you don't happen to have any truffles on hand, you can use a sprinkling of truffle oil that can be found at your local specialty shop.

Ingredients

  • Store bought puff pastry to cover a deep pie dish
  • 1 pint medium oysters and their liquor
  • 2 cups leftover turkey cut into bite sized bits
  • 1 small black truffle
  • 1/2 cup black olives sliced
  • 1/4 cup turkey broth if needed
  • 1 ounce cream
  • Celery salt
  • Grated nutmeg
  • Salt and pepper
  • Butter as needed

Instructions

  1. Preheat oven to 425 degrees Fahrenheit
  2. Scald the oysters in their liquor for five minutes.
  3. Drain the oysters, saving the liquor.
  4. Place a layer of turkey in the pie pan.
  5. Season the turkey layer with celery salt, nutmeg, salt, and pepper.
  6. Add a few dabs of butter and some very thin slices of truffle.
  7. Sprinkle some olives over the layer.
  8. Then place a layer of oysters over the turkey.
  9. Season the oysters in the same manner as you did the turkey layer.
  10. Add turkey broth to the oyster liquor to come to 1/4 cup.
  11. Pour the oyster/turkey mix into the pie.
  12. Add the cream.
  13. Fit the pastry over the pie dish, crimping the pastry over the edge of the pie dish.
  14. Cut some holes into the top of the pie to let out the steam.
  15. Bake for 15 minutes or until the pastry is golden brown.

Turkey Salad

Ingredients

  • 6 cups diced left over turkey
  • 1 cup mayonnaise
  • 1 cup sweet relish
  • 4 stalks celery, diced small
  • Celery salt to taste
  • Salt and pepper to taste
  • Garlic salt to taste

Instructions

  1. Mix everything thoroughly.
  2. Adjust the seasonings to taste.
  3. This is great on rye toast or on top of a mixed salad.
